Ingredients (Serves 6-8 hungry campers)
For the Kabobs:
2 lbs. ribeye steak, cut into 1.5-inch cubes
1.5 lbs. large shrimp, peeled and deveined (16-20 count works best)
8-10 wooden or metal skewers
For the Marinade:
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup white wine vinegar
1/4 cup cooking sherry
1/4 cup lemon juice
1/4 cup honey (we like to use locally harvested honey from Bill's Bees of Georgia)
3 cloves garlic, minced
1 Tbsp. Worcestershire sauce
1/2 tsp. ground ginger
Instructions
Step 1: Prepare Your Marinade
In a large mixing bowl (we provide one in both Waylon and Willie!), whisk together all marinade ingredients until well combined. The honey might be stubborn at first, but keep whisking – it'll come together beautifully.
Step 2: Marinate the Steak & Shrimp
Place the steak cubes and the shrimp in a 1 gallon Ziplock bag. Pour marinade over the steak and shrimp. Refrigerate and let the marinade do its work for 2 to 4 hours.
Pro Tip: Use the spacious refrigerator in your rental to keep everything properly chilled. Both Waylon and Willie have refrigerator/freezer units!
Step 3: Assemble Your Kabobs
This is where the fun begins! Thread your ingredients onto skewers, alternating between steak and shrimp. Leave small spaces between pieces for even cooking. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Step 6: Fire Up the Grill
Whether you're using the campground's fire ring, or the campsite grill, make sure you have medium-high heat. If you're using our Blackstone Griddle, preheat it to about 400°F.
Step 7: Cook to Perfection
Grill kabobs for 8-12 minutes total, turning every 2-3 minutes. The steak should reach your desired doneness (we recommend medium for the best texture), and the shrimp should be pink and slightly curled.
Temperature Guide:
Medium-rare steak: 130-135°F
Medium steak: 135-145°F
Shrimp: 145°F (they should be opaque throughout)
